LATIN AMERICAN STREET FOOD
Chef Byron Godoy Flores, who reigns from Antigua, Guatemala, has been living with his family in Galway for the past 9 years. Growing up, Byron's mother, Dora, had a pupusaria - a pupusa restaurant - in Antigua where he learned to fall in pride with the food of his heritage. Under a predominantly female influence, Byron watched his mother, his aunts and his sister make pupusas and other national dishes everyday before deciding to attend culinary school in the late 2000's.

The pupusa is a humble food that goes back nearly 2,000 years through Byron's Mayan blood. A humble food that requires dozens of hours of preparation - it truly is a labour of amor!
Simply put, they are a flat puffed corn tortilla stuffed with anything you want! And it is the various fillings that give the flavour and take all the time to prepare.

This circular bit of stuffed corn was the inspiration Byron needed to propel his curiosity and hunger to learn about, appreciate & love its variations all over Latin America!
